As we welcome the month of May, we also prepare for the delicious holiday of Cinco de Mayo. Tacos and tequila, anyone? With it being on a Saturday this year, all your favorite restaurants will probably be packed and if you’re looking to avoid the crowds and opt for an in-home celebration, I got you.
I’ve rounded up some of my favorite recipes from my favorite food blogs to make sure you’re prepared to have the best fiesta at home.
If you’re a lover of fish tacos, this one is for you. Equally delicious as they are pretty, these Blackened Cod Fish Tacos w/ Sriracha Lime Crema are quick and easy to make. The fish, cabbage, and radish work together to create just the right amount of crunch in each bite and the sriracha lime crema tops it off like a cherry on an ice cream sundae.
Calling all sweet potato lovers. This vegan option (meat can be added if you want) by Gringalicious combines two of my all-time favorite things – sweet potatoes and tacos. I could honestly eat both every day and live in bliss.
Winner, winner, chicken dinner. These Chicken Tinga Tacos from Pinch of Yum are most definitely a winner in my book. You get all the glory for minimal effort making them perfect when you have guests over.
I never would’ve thought to put green apples on tacos, but after trying it, you’ll understand why this unusual combination works. Another option for vegans or those who just love veggies like me, these Chipotle Cauliflower Tacos are sure to be a hit.
If you’re a fan of mango, you’re going to love these tacos. Blackened shrimp with mango avocado salsa, each bite gives you both savory and sweet.
Last, but certainly not least are these heaven-sent veggie tacos made with poblano peppers, mushrooms, kale and dare I say it – pineapples. Yes, pineapples (and not the pineapple salsa, just fresh pineapples). Oh, and I forgot to mention the cilantro yogurt sauce.
