Caesar salads are a favorite in my house. They’re quick, healthy and delicious. Since the dressing is what makes salads unhealthy – so I use yogurt caesar dressing or Marzetti’s Simply 60 Creamy Caesar Dressing. 60 Calories per serving, can’t beat that.
Because caesar salads are so simple, sometimes I like to change it up a bit. This time around, I added avocado and lime – and used rotisserie chicken instead of grilled chicken.
2 boiled eggs
1 avocado – sliced
Shaved parmesan cheese
Pulled rotisserie chicken
- Add the kale, Rromaine, croutons, Parmesan, eggs, avaocado and chicken to a large bowl.
- Add caesar dressing and squeeze lime over salad. Toss until combined.
- Serve immediately.
